Quick and Easy Apple Crisp

One of the things I like most about Thanksgiving is the desserts.  Pecan Pie, Pumpkin Pie, Chocolate Pudding Pie and of course Apple Pie.  However, as much as I love to eat pie I absolutely hate to make them.  My crusts are always hard and tasteless or the pie filling is watery which makes everything mush!  Yuck!  And since I am in charge of the apple dessert this year I knew I had to come up with an alternative.  My fix....turn that pie into a crisp which also has an extra bonus because my husband who has gluten issues can enjoy this as well.  I hope you all like this as much as we did!


Quick and Easy Apple Crisp


Ingredients

4 cups of apples, peeled and sliced

1 T sugar

2 T water

1 tsp cornstarch

2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup all purpose flour (if making GF change to GF All purpose flour)

1/2 cup of old fashioned oats (if making GF make sure your oats are certified GF)

1/4 cup brown sugar

2 T softened unsalted butter (very cold, cut into small cubes)


Directions

  1. Preheat the oven to 350 degrees.  Coat a pie dish (I used a 2 qt glass baking dish) with cooking spray.

  2. in a large bowl mix the apples, sugar, water, cornstarch, 1 tsp of cinnamon and nutmeg until well mixed.

  3. Place apple mixture into your pie dish.                                                      

  4. To make the oatmeal topping gently combine the flour, oats, brown sugar, 1 tsp of cinnamon, and butter until crumbly.  (Tip: use the tips of your fingers and not your palms which will cause the butter to melt.)               

  5. Sprinkle the oatmeal topping evenly over the apples.  (It will seem like a lot)

  6. Bake for 25 to 30 minutes or until the apple are completely cooked and the juices if bubbling.

  7. Serve hot or at room temperature.  (Apple Crisp is amazing when served with vanilla ice cream!)
